Cheesy Mice
4 eggs, hard-cooked
1/4 cup finely grated Cheddar cheese (1 ounce)
2 tablespoons low-fat cream cheese
8 radishes
16 dried currants
2 ounces Edam cheese, cut into small chunks
Radish or mustard sprouts, to garnish
With a sharp knife, carefully halve eggs lengthwise and scoop out the yolks. Put yolks into small bowl.
Add Cheese . Mix together until smooth. Spoon into egg whites and smooth the surface.
Place filled egg halves upside down. To assemble each mouse, cut slits at the pointed end of eggs, then insert small slices of radish for ears, currants for eyes and small pieces of radish for noses. Attach the radish roots for tails.
Serve at once
Makes about 4 serving.
Zoo French Toast
6 slices bread
1 large egg
3 tablespoons milk
3 tablespoons butter
With cookie cutters, cut bread into animal shapes.
In a shallow dish, beat egg and milk together.
In a large skillet, melt butter. Dip bread shapes in egg mixture, coating each side. Place egg-coated shapes in skillet and cook on each side until golden.
Serve at once.
Makes about 12 pieces.
