Tomato Flowers

1/2 pound cherry tomatoes, red or yellow, if available

3/4 cup low-fat cream cheese (6 ounces)

1/2 cucumber, sliced

Fresh chives, to garnish

With a sharp knife, cut off tomato centers, then place upside down on a double thickness of a paper towels to drain.

In a small bowl, beat cheese to soften. Place in a pastry bag fitted with a small star tip. Pipe cheese into tomatoes.

Arrange cucumber slices on a serving plate and then place the tomatoes on the top.

Makes 6 to 8 servings
